Oatmeal Chocolate Chip Peanut Butter Bars Recipe
Everybody, it seems, loves the combination of peanut butter and chocolate. It shows up in cakes, pies, a popular candy bar, puddings, and cookies and bars. The following Oatmeal Chocolate Chip Peanut Butter Bars actually caught my attention because I saw a blog from an obvious non-baker who couldn’t write a recipe correctly and presented it in such an amateurish manner that it was ridiculous (Peanut Butter Passion Bars). Normally I skip trying anything posted by these obviously stupid non-cook amateurs (and there are plenty who took advantage of the Covid food blogging craze), but this one sounded pretty unique and tempting after translation and I tried it adding my own few changes. The end result, according to the Official Hancock Tasters, is a keeper.

32 Bars

Crust:
1 cup flour
2 cups oats
1 cup brown sugar
1/2 teaspoon salt
1/2 teaspoon baking soda

3/4 cup butter, (1 1/2 sticks)

Filling:
1 14 oz. can sweetened condensed milk
3/4 cup peanut butter
2 teaspoons vanilla
1 cup semi-sweet chocolate chips


  1. Preheat oven to 350°. Spray a 9" x 11" shallow baking dish with non-stick spray and line with parchment, making sure the parchment comes up on the long sides (the sweetened condensed milk makes it hard to remove from the pan).
  2. Crust: Mix the flour, oats, brown sugar, salt, and soda in a mixing bowl. Cut the butter into chunks and cut in until the butter is totally incorporated; press half of the mixture over the bottom of the prepared pan.
  3. Filling: Mix the sweetened condensed milk, peanut butter, and vanilla until smooth; spread over the crust.
  4. Sprinkle the chocolate chips evenly over the peanut butter mixture and sprinkle the remaining crust over the top of the chocolate chips, pressing it down a bit.
  5. Bake 25-30 minutes or until set.
  6. Remove from the oven to a cooling rack. Let cool thoroughly before cutting into 32 bars.
